The lanes of Old Delhi are full of the aroma of spices, food stalls and a variety of cuisines. Kashmiri kebabs and wazwan are among the little-known gastronomical wonders of the capital. Every year, wazas from the valley set up temporary hole-in-the-wall eateries near the Jama Masjid and prepare meat and buff seekh kebabs. The kebabs are coarsely grounded and prepared with Kashmiri spices, making them different from Awadhi kebabs and other varieties common in Delhi. Along with the kebabs, the wazas also prepare delicacies from wazwan and some vegetarian dishes that belong to the lesser known Kashmiri Pandit cuisine. The walk will involve relishing Kashmiri cuisine and listening to some local stories that the makers tell with some chai/kehwa and lavasa.
